Green bean and coconut soup

Preparation Time: 25 Minutes..... Cooking Time: 15 Minutes
| INGREDIENTS 1 medium carrot (120g) 30g butter 2 teaspoons chopped fresh lemon grass 2 cloves garlic, crushed 1 teaspoon grated fresh ginger 1 teaspoon ground turmeric 2 teaspoons ground coriander · 2 fresh green chillies, chopped 2 green onions, chopped 55g green beans, chopped 31/4 cups (810ml) coconut cream 2 cups (160g) bean sprouts 2 tablespoons chopped fresh coriander leaves |

Cut carrot into fine strips. 2- Heat butter in large pan; cook lemon grass, garlic and ginger, stirring, over medium heat 1 minute. 3- Add turmeric and ground coriander; cook, stirring, 1 minute. 4- Stir in carrot, chilli, green onion, beans and coconut cream, bring to boil; simmer, uncovered, 5 minutes. 5- Stir in bean sprouts and fresh coriander just before serving.
